Gyuto
Forged in San mai "clean" wrought iron clad + 1.2519 tungsten steel
Nashiji finish and stone polished bevels finished on Kasabori stone.
Blade length is 256mm, 56mm high at heel, 6.4 - 1mm thick on spine before the tip, 286 grams
Handle is rokkaku hanmaru shape, made of australian york gum wood (family of eucalyptus) and stainless steel.
A long and quite heavy blade that feel just more light and nimble that it can seems. Weight is well balanced. Taper is quite extreme and blade is then forged thinnely so it cuts like a classic midweight. 1.2519 tungsten steel feel strong and wear resistant on the stones and will keep the edge for long time. Lovely steel that is very balance with that wear resistant capacity without being too bad to sharpen. Handle is a beautiful york gum burl wood I received recently. Very dense, beautiful and classy wood.
Price : 1100 euros
shipping fees and case not included.
